Deep Fried Macaroni and Cheese Bites

Last Saturday my mom had some family members over for a delicious dinner that included a lot of macaroni and cheese. Needless to say, we had a lot of leftovers. Today I was bored and didn't feel like working on my law review note, so I decided to try making deep fried macaroni and cheese bites. This would not be the first time that I have deep fried something. I didn't really use a recipe but just kind of winged it.

1. Make your coating. I used smashed up Ritz crackers, flour, parmesean cheese and pepper, but I think you could use whatever you want.

2. Cut the chilled leftover mac and cheese into the size that you want it and coat it with egg.

3. Put the bite in the cracker mixture or whatever you decide to coat the bites in.

4. Put it in hot oil until it is as crispy as you want it.

5. Enjoy!

I have to say, that they were really good. The mac and cheese was warm and gooey and they crispy coating gave it a nice touch. The next time, I will definitely add some sort of seasoning to the coating to give it a little more flavor.
